wonderfull wednesdays presents...banananaaa cake


 
mum's banana cake
 
 
ingredients
 
8oz sugar
12oz self raising flour
1 tsp nutmeg (fresh, grated)
egg replacer (enough for 3 eggs)
2oz butter
2-3 bananas
a few tbsp of soya milk
a splash of vanilla extract
 

1) take a jug and whisk up the egg replacer with the water. (it will say on the packet how much replacer/water to add) 
i will say that i don't usually use egg replacer, if a recipie calls for eggs i would normally simply not add them and instead use baking powder for the mixture to rise and then add a little soya milk if the mixture was too stiff. but i was a little bit curious to see what all the fuss was about with the old egg replacer so thought i'd give it a go!
 
 
 
2) now, pour this into a mixing bowl and measure out your sugar and then add it to your 'eggs' and whisk them up along with a dash of vanilla extract!
 
 
3) now measure out your flour and grate the nutmeg...about half the nutmeg should make a teaspoon :)
 
smells so yummy!
 
 
4) add the flour and nutmeg to the sugar mixture...
 

 
 
5) get mixing! the mixture will be very very dry, but don't panic my lovelies, this is where our friend mr.soya milk comes onto stage :)
 

 
6) stir in enough soya milk until it looks like this...
(a tad thicker than cupcake batter)
 
7) now then, where were we? ah yes, them bananas still need chopping...wouldn't be much of a banana cake without them ay?
 


 
 
8) once chopped, add them to the mixture and stirrrrr it up.... (i dare you to not start humming bob marley at this point!)
now, pour the mixture into your chosen pretty dish and flatten out the top.
break the butter into chunks and scatter across the top (yes i know it sounds a little bit like i may have finally lost a little part of my brain...but come on lovelies, trust...) :)
sprinkle some more yummy sugar over the top and pop it in the oven!
 

 
9) bake at 190o for about 40mins (make sure you use a cake tester to check that the middle is cooked-nobody likes gooey middles)
once cooked it will be golden brown and all the sugar will have gone slightly crunchy on top....yes, you may dribble at this point, do not be alarmed...it happens to everyone.
 
 
serve warm with either cream or icecream or dare i say it both! :)

Oh wow, this sounds so good. It's starting to cool down and I'm really wanting to bake, this cake with some coffee would be divine! :)
